classic pecan pie
preheat oven to 350.
1 cup sugar
1 cup corn syrup
2 tbs melted butter
1 1/2 tsp vanilla extract
1 1/2 cup pecans
1 pie crust
pre bake pie crust for 10-12 minutes until golden brown.
in a medium bowl mix eggs, sugar, corn syrup, butter and vanilla.
fold in pecans (you can leave these whole or chop them, i give them a rough chop)
pour into pie crust and return to oven for 50-55 minutes.
when done, the pie should be firm around the edges and soft but set in the middle.
allow pie to cool/set before serving.
